This honey nut banana oatmeal is easily my favorite way to spice up my morning oatmeal and literally takes only a few minutes to create.
Having spent the last month or so feeling like I have nothing ready for the upcoming wedding, it felt amazing getting wedding-related tasks done this weekend! The table decorations were still up in the air as I was debating on what to use as the center piece. Do I use the 70-ish empty wine bottles that I have been saving and decorate them? How do I get a light of some sort inside of those… (I did not drink said 70 bottles of wine by myself just as an FYI… though I wouldn’t have minded trying…) Or wait, look what I found on Pintrest. But do I want to do any more DIY-ing for this wedding? Well all of these questions have been answered though you won’t get to see the final decision until after the wedding. Now as most people that see me on a semi-regular basis can attest to, I am losing my freaking mind and I hope I find it once this wedding is over…
Part of what has helped hold onto my remaining sanity has been meal prepping on the weekends. This helps to make meals during the week even easier. I make a big batch of this delicious oatmeal every Sunday to eat for breakfast during the week.
There are some weeks where I am too busy or forgot to buy toppings to spice up my oatmeal. I usually have the ingredients for this amazing Honey Nut Banana topping on hand though. On a sad side-note, Emmy no longer chooses to eat bananas. I used to give her a bite of two whenever I would eat one and she won’t even take them out of your hand now… Sigh.
I make this topping fresh every morning since if you do it ahead of time, the nuts get soft and the bananas get mushy. <– I tried several times to re-word that sentence ending and unfortunately there is no other way to say it. So hopefully you get at least a small giggle out it…
|Honey Nut Banana Oatmeal|| |
- 1 banana, peeled and sliced
- ⅔ tbsp honey (or more if you like!)
- ¼ cup nuts of your choice (I prefer chopped pecans or walnuts)
- 1 tbsp ground cinnamon
- ⅔ tbsp flax seeds (optional)
- Make your favorite oatmeal.
- Top your bowl of warm oatmeal with the banana slices, honey, nuts, cinnamon and flax seeds (if desired) and enjoy!
